(Enlarge)		The Bodegas Maestro Sierra was founded in 1830 and nowadays consists of about 1500 butts. Still in the same family today, it is named after the late Don Antonio Borrego, a cooper nicknamed the "master saw" (Maestro Sierra). The estate is now managed by his widow, Dona Pilar and their daughter. They purchase grapes from strictly selected growers in the Balbaina district near Jerez and mature the wine in their Bodega tucked away in the old quarter of the city. Their collection of old sherries and more specifically of old Olorosos, is recognised as being one of the finest in the Sherry region.£30.00

(Enlarge)		CUSTOMER RECOMMENDATION:"deep golden; a fabulously deep, raisiny nose - redolent of hazlenuts, dried fruits and apricot. Very intense - incredibly long with hints of smoked meat, roasted chestnut on the finish. Bone dry and very aromatic - wonderful quality, intensity and richness. A real find."

Incidentally, 1/7 refers to the number of butts from which the solera is selected - usually something like 1/42, 1/15. The smaller the number of butts the rarer the wine. 		£60.00
