Winemaker: Ian Hollick & David Norman
Hollick wines: some background... Hollick is an
independent, family-owned winery, located on one of the original John Riddoch
Coonawarra blocks in the cool south east corner of South Australia.
Planting of the classic varieties of Cabernet Sauvignon and Riesling began in
1975 under the guidance of Ian Hollick. Ians involvement with viticulture
goes back to his childhood in Mildura as the son of a soldier settler fruit
blocker. After studying Agricultural Science, Ian worked for Mildara Wines in
Coonawarra, progressing to become manager of Mildara vineyards nationally and
the Coonawarra winery.
With a vision of a great future for Coonawarra,
Ian purchased 22 hectares of prime Terra Rossa land in 1974. The Hollick Winery
was established in 1984 and a year later Hollick won the coveted Jimmy Watson
Trophy for the best one-year old red wine. The property expanded to more than
100 hectares following the purchase of the Wilgha property in 1987. Hollick has
recently expanded north of Coonawarra at Wrattonbully, a region we will hear a
lot more about in the future. Shiraz will be the main production for Hollick in
this region.

people...
Ian Hollick Ians involvement
with viticulture goes way back to his childhood in Mildura as the son of a
soldier settler fruit blocker. After studying Agricultural Science at Dookie
Agricultural College, Ian worked for Mildara Wines as Coonawarra vineyard
foreman, progressing to become manager of Mildara vineyards nationally
including the Coonawarra winery.
Under Ians guidance, the
Hollick's property expanded to more than 100 hectares following the purchase of
the Wilgha property in 1987.
David Norman David Norman
has brought a wealth of experience to Hollick Wines since taking up the
position as winemaker in February 2000. Prior to joining Hollick, David had
completed 22 vintages for companies including Saltram, Woodleys, Wynns and most
recently Miranda. David is well acquainted with Coonawarra, having produced
many wines from Coonawarra fruit whilst employed at Saltram and Woodleys,
including a Jimmy Watson finalist. He is keen to maintain and finetune the
Hollick style with wines that express the unique terroir, displaying fine
balance and integration.
