Hollick The Nectar Botrytis Riesling: Description The 2001 The
Nectar is straw yellow in colour in its youth, but will develop deep
golden colours as it ages. Lime, grapefruit and dried apricot fruit aromas are
enhanced by marmalade and honey botrytis characters. The palate is rich and
luscious, and displays honey, mandarin peel and apricot flavours finishing with
a balancing, drying acidity.

Botrytis Riesling: Background It is said that the gloriously
sweet, concentrated wines that result from grapes infected by the Noble Rot
(Botrytis cinerea) are indeed The Nectar of the gods. The first
botrytised wine made by Hollick was from the 1985 vintage and the team has
developed quite a reputation for this style.
Hollick The Nectar Botrytis Riesling: The Harvest The Nectar is only
made in vintages where late autumn rains present the ideal conditions to
precipitate the development of Botrytis cinerea, which is typically every
second or third year. The 2001 The Nectar is a result of these
conditions. After careful selection in the vineyard this blend combines
Riesling (78%) with small parcels of Sauvignon Blanc and Semillon. The Botrytis
infected grapes were hand picked late in May.
Hollick The Nectar Botrytis Riesling: The winemaking After harvesting and
pressing, the juice was cold settled for several days then seeded with yeast
and slowly fermented until the desired balance between sweetness and acidity
was attained.

matching The 2001 The Nectar can be enjoyed
fresh, but will develop further complexity in good cellaring conditions for 10
years or more. Serve this wine chilled with fresh pate, fresh fruit for dessert
or ripened soft cheeses.
