(Enlarge)		This latest vintage of Shaw and Smith's M3 Chardonnay fits their stylistic goal to make a single vineyard Chardonnay that is both fine and complex, with the potential to carry some bottle-age. In a slight deviation from previous M3’s, there is a small component of wild ferment material which has added an interesting extra dimension to the wine. Despite barrel fermentation, lees stirring, partial malolactic, and over 10 months maturation in French barriques, the wine has a remarkable fruit purity due to careful handling, low storage temperature and a very cool vintage. With white stone fruit and savoury nutty characters, this is an elegantly structured wine with a long, fine, bone dry finish.

This wine is named after the three partners in the vineyard, brothers Michael and Matthew Hill Smith along with cousin Martin Shaw. The ‘M3 Vineyard’ is a 29-hectare site planted at Woodside in the Adelaide Hills. Aggressive pruning and pre-harvest bunch thinning are undertaken to reduce yields. The fruit is hand picked, chilled overnight, whole bunch pressed and fermented in new and one year old French barriques.		£19.50
